Zombie Snot Biscuits - Gluten Free, Refined Sugar Free and Dairy Free

The "Zombie Snot" Biscuits gross out adults and kids alike - awesome gross Halloween food - but best of all they have a secret healthy ingredient (spinach if you can believe it!). They can be gluten free, refined sugar free and dairy free. So there is no need to feel bad about serving biscuits or cookies!

Witches Fingers - Gluten Free, Dairy Free

The "Witches Fingers" are simple gluten free sweet bread/short bread type biscuits that can be eaten alone or dipped in 'blood' strawberry jam. It depends on how much you want to make your guests shudder! They are gluten free and can easily be dairy free. They use coconut sugar to give and extra sweetness but this could be omitted if you were using the jam dip.

Banana Pop Ghosts

The Banana Pop "Ghosts" are made using white chocolate to make them extra delicious. If you really needed them sugar free then simply bananas with chocolate chips would look extremely effective (if you did this then you would need to make them immediately before the party or dip the in apple juice before making so they didn't brown).

These biscuits are made using a super secret ingredient. It will have the adults smiling along with the kids!

Ingredients - Makes approx 30

  • 180g Dates (stones removed)
  • 45ml Boiling Water
  • 300g Gluten Free Flour (I used this one)
  • 50g Spinach
  • 3 tsp Baking Powder
  • 3 eggs
  • 180g Butter (Cow, Goat or Coconut Butter)
  • 1 tsp Ginger Powder
  • 1/2 tsp Cinnamon Powder

(You could use vanilla paste instead of ginger if you prefer a sweeter taste)

  1. Preheat the oven to 180 C (170 C if fan assisted oven) (350 F). Grease or line two oven trays.
  2. Put the dates (with stones removed) into a mug and pour the boiling water over the top - leave to sit for 10 mins while you make the flour mix.
  3. Rinse and dry the spinach.
  4. Blend the spinach, flour, ginger/cinammon and baking powder in a food processor (I used max speed for 30 seconds with my Thermomix). Hopefully it will look something like the flour in the picture. Remove from the food processor and set aside.
  5. Blend the butter until soft.
  6. Add the flour mix to the butter along with the remaining dates and eggs. Blend on full speed for 30 seconds until the dates are fully blended in.
  7. Using 2 spoons put approximately one teaspoon of mix separately onto the oven trays.
  8. Cook for 7-10 minutes until just starting to brown at the edges (mine are slightly over done here!).
